As of the census of 2000, there were 6,232 people, 2,816 households, and 1,881 families residing in Cambria. The population density was 280.8/km² (727.1/mi²). There were 3,752 housing units at an average density of 169.0/km² (437.7/mi²). The racial makeup was 98.7White, 0.35% African American, 0.99% Native American, 1.16% Asian, 0.13% Pacific Islander, 4.03% from other races, and 2.26% from two or more races. Hispanic or Latino of any race were 14.02% of the population.

There were 2,816 households out of which 18.6% had children under the age of 18 living with them, 62.6% were married couples living together, 7.1% had a female householder with no husband present, and 33.2% were non-families. 26.8% of all households were made up of individuals and 13.2% had someone living alone who was 65 years of age or older. The average household size was 2.21 and the average family size was 2.63.

In Cambria the population was spread out with 16.4% under the age of 18, 7.8% from 18 to 24, 18.0% from 25 to 44, 33.5% from 45 to 64, and 26.6% who were 65 years of age or older. The median age was 51 years. For every 100 females there were 91.4 males. For every 100 females age 18 and over, there were 89.5 males.
